France Inter listeners know him well. Dominique Hutin, based in La Manche, is in fact the reference for the show We will taste on Sunday at 11 a.m., when it comes to talking about wine or cider.

He is also a mad lover of Cotentin and gives us his favorite addresses here.

Where should we invite you to dinner if we want to really please you?

There are two addresses that come to mind spontaneously, both in Cherbourg. The Pily obviously, for the sensitivity of chef Pierre Marion. The sincerity of his cuisine touches me, particularly his work with seafood which reflects his authentic closeness with the fishermen. The restaurant is now located on the port in an incredible setting. And I'm also thinking of Carabot, this time in the city center, with there too, a real cuisine of character that is constantly changing.

What if you now had a nugget, a craftsman, to show us?

Direction the Val de Saire, and more precisely, the small village of Montfarville. A farm, which has become an absolutely improbable delicatessen, nestles here, run by Jean-François Debrix, the representative of a long family line. His soup fat is absolutely insane!

The Cotentin is also rich in its market gardening palette. Do you have, again, a suggestion of the heart?

Without hesitation, Le Champ Dépaysant. It is a small production that can be found on the Thursday market in Cherbourg. They obviously only produce seasonal, organic vegetables, particularly ancient species. Beyond the admirable work they do, I also really like the fact that they don't sort misshapen vegetables!

And when is it time for cheese?

L’Essentiel, in Saint-Vaast-laHougue. It is a recent cheese factory which exactly represents the idea I have of the resurrection of the profession.

We obviously end with the drinks menu…

On the cider side, I really want to highlight the work of Damien Ferey, at Vergers de la Passion in Rauville-la-Bigot. This is once again the continuation of a family story, with a young producer full of ideas and already some great successes. You should also really make a detour to Cherbourg to visit Beerz. Christèle has a real talent for communicating her knowledge and her love of beautiful products.

A little naughty treat before parting?

The Red Balloon in Cherbourg. A wine bar and a cellar at the same time. The place is unique. I almost don't want to say more. Get going!
