Today we are highlighting the scallop, a treasure of our seas. This shell has been around for over 150 million years and was already highly valued in Roman times. It is scientifically called “Pecten Maximus”, which means “very large comb” because of the small grooves on its shell that resemble the teeth of a comb. It is also linked to the history of the pilgrims of Santiago de Compostela who hung these shells on their bags or hats. But be careful, to taste the real scallop, check that it is “Pecten Maximus” on the label.
