Today, we are highlighting the Normandy oyster, a seafood delicacy that we love. Normandy is famous for its oysters, with over 25 tons produced each year. Among all these oysters, there is the Isigny oyster, but also three other tasty varieties: the Saint-Vaast-la-Hougue oyster, the Côte de Nacre oyster and the Côte Ouest oyster.

At 6 months, the small oysters are placed in special pockets offshore, where they are well pampered. Oyster farmers often turn these pockets over so that the oysters grow well. After three years in the open sea, the oysters are sorted by size and placed in parks closer to the coast for a final touch of finesse.
