Native of Cherbourg and after a prestigious career in very beautiful houses such as Le Longchamp in Paris (2 Michelin stars), Taillevent in Paris (3 Michelin stars) and La Vieille Fontaine in Maisons-Laffitte with François Clerc (2 Michelin stars) then second of the great Chefs Joël Robuchon – Jamin in Paris (3 Michelin stars) and Guy Martin – Grand Véfour in Paris (3 Michelin stars) he took charge of the kitchens of La Truffière in Paris (1 Michelin star) in 2016 and that of the Park restaurant 45 at the Grand Hôtel in Cannes in 2018 (1 Michelin star).

Awarded numerous distinctions both in France and Belgium, he obtained 17/20 in Gault & Millau and was elected Chef of the Year in 2004.

He received the European Hotel & restaurant Award career trophy in 2019.

According to Christophe Poard:
